Skillet - Grilled Burritos
3 cups cooked chopped chicken breast
1 chopped onion
1- 15 oz can black beans, rinsed and drained
1-11oz can mexicorn or yellow corn with red and green bell papers drained
4 oz (1 cup) of shredded cheddar or Colby cheese
2 Tbsp diced pickled jalapeño peppers
2 tsp Dijon mustard
8 - (6 or 8 inch) tortilla soft shells
Stir all ingredients together.
Fill the tortilla shells evenly with the mixture.
Fold tortilla in half and place in oil or buttered pan and "grill' till brown.
Serve with a salad on side and enjoy!
